As an ode to a very special October (wedding bells!) and to all that is good, warm and comforting, I decided to fumble about in the kitchen and create my own batch of pancakes. We don’t carry flour in the house but thought oats would suffice. Remember to pulverize the oats in a blender before adding in any of the other ingredients or they’ll obviously all stick together and end up being more coarse than smooth.
1 cup of rolled oats pulverized in the blender
1/2 teaspoon of salt
1 whole egg
1/4 cup of unsweetened almond milk
1/2 cup of canned pumpkin pie mix
1 teaspoon of baking powder
1 teaspoon of vanilla extract
A dash of cinnamon
1 tablespoon of agave extract
1 tablespoon of chia seeds (optional)
This is such an easy recipe because all you’re going to dirty is a blender and perhaps a spoon. You simply combine everything in a blender, mix until you have a smooth consistency and pour into a heated Pam-sprayed pan.
The prepping of this batter from start to finish literally took me less than 5 minutes. If I can do this, anyone can. 😛
