Friday = Feel good food

Lots of yummy food creations – especially desserts! I’m gaga over my granola and ice box recipes. I think I’ve made over 4 different ice box creations just this week alone! Paul and I aren’t complaining. : P

Breakfast: 2 granny smith apples with cinnamon and boiled egg whites.
Quiznos for lunch! Guess which one was Paul’s? : P
Small caprese sanwich on chipotle jack. Bread was too greasy. Would have preferred the whole wheat instead.
Freshly fried waffle fries. Had 3 crispy pieces.
Paul’s large chicken, bacon, and avocado sandwich.
Had a itzakadoozie. Only 80 calories a pop!
Another ice box creation!
Layers of cool whip, vanilla wafers, cream cheese+peanut butter filling, wafers, vanilla pudding, wafers, cool whip, and shredded coconut with silvered almonds. Woo! My biggest yet!
Combined fat free cream cheese and 1.5 tablespoons of peanut butter. *Note to self: Never use fat free again!
Cut the wafers in half lengthwise. Wafers are too dense if I use them whole.


Paul and I had a slice after a few hours. It was delicious! My best batch yet. Paul says the cream cheese+peanut butter mixture makes the cake taste like coffee. Cool, yo.
Paul’s dinner: chicken salad sandwiches. Shredded chicken, raw onions, boiled eggs, all-purpose seasoning, and cayenne pepper.



Dinner: Ran across a recipe for oatmeal pancakes at So simple and delish!
1. Add 1/4 cup of rolled oats and 2 egg whites in a small bowl. Store in fridge overnight.
2. Add in 1/2 teaspoon baking powder, cinnamon, and vanilla extract.
3. Pour into heated pan and form into a pancake-esque mold.
Next time, I’m going to add some mashed bananas into the mix for more moisture.
1/2 sliced banana on top with honey. Darn-tootin’ good eats!
